Mexican Chilli Beans


INGREDIENTS

500g lean mince (I used grass fed beef)
1can chickpeas
1can mexican chilli beans
1can white beans
1can kidney beans
2cans diced tomatoes
4TBL cumin
2TBL mexican chilli spices
2TBL chilli flakes OR 1 red chilli chopped

Serve with
1/4 chopped Avocado & Sour cream


METHOD

- Brown mince in fry pan (no oil needed) Make sure you use your wooden spoon and really chop the mince up so it is not in big clumps
- Add in all of the beans, stir
- Add in both cans of the diced tomatoes, stir 
- Add spices & chilli, reduce heat & let simmer for 15-20mins, stirring occasionally

Serve with chopped avocado (approx 1/4), sour cream + pita bread to dip in the yummy mince mixture! You could even serve on a bed of brown or basmati rice if you wanted to bulk the meal up depending on your goals.

TIP! Mix half natural greek yoghurt with half sour cream so you can have more but less calories!
